Recipe for chocolate and courgette muffins

Here is the recipe for the muffins:
225g grated courgette
175g self raising flour
25g cocoa powder
1 egg
100g margarine
75g sugar
180c gas mark 4
12 muffin cases

cream the margarine and sugar together until light and fluffy
beat in the beat and grated courgette
sieve the flour and cocoa powder and lightly fold into the mixture
divide into muffin cases and bake for 30 mins until they spring back to the touch.

A moist chocolate muffin that doesn't taste of courgette.

Don't let the decoration put you off. That's what happens when you let your little boy free with the icing pens.

Round up of the week

We have had a very busy week this week. In between visits to the farm and the library we have managed to fit in a lot of baking and crafting.
We have made:
a banana loaf,
jam tarts
flower  cupcakes
pasties
a treasure chest.
I have also been consumed with making for the upcoming births (Dawn and Gemma). I have tried my hand at cross stitch for the first time. I don't know how people with bad eyesight can do it! I have made lavender bags for the nursery's. I also want to make a change mat and fabric books for each but since the first one is due in October I better get a move on.
I'll post photos later.

Recipe for smarties cake


Here is my recipe for my smarties cake.
4 medium eggs
200g Self raising flour
200g Margarine
200g sugar
1 tsp of vanilla extract
25g cocoa powder
2tbsp of cherry jam
2 tbsp of chocolate spread
1 tube of smarties

preheat oven to gas mark 4 or 180c
Grease and line two 8'' sandwich tins
cream the margarine and sugar until light and fluffy
beat the eggs and add a little at a time beating well with each addition
Stir in the vanilla essence
Sieve the flour and cocoa powder and fold gently into the mixture.
Divide between the two tins and bake for 25mins until the cake springs back to the touch
allow to cool and remove from the tins
sandwich together with cherry jam
spread chocolate spread on top of the cake and stick the smarties on.

We've had a quieter day today, but have managed to fit in a bit of craft. We had the shell collection out and William spent a good half an hour threading shells to make a necklace. I'm just finishing the book proposal and hope to send it off tonight.

A busy Tuesday

Just having a bit of downtime now, William is napping and I am having a much needed break. It's amazing what you can fit into the day when you are woken by your two year old at half six and they want to do a new activity every 20-30 minutes. So here's the round up, in between do the food shop and cleaning ( the boring bits ) we have:
Made some more lavender pyramids ( nearly every drawer smelling lovely)
Made a strawberry trifle (I'll post photos once we've added the cream)
Baked a smarties cake (likewise the trifle)
Sorted the cupboards
Made 5kg of muesli
Made a cardboard city ( more paint went on William than on the city so also had to afternoon bath time as well!)  
No wonder we're tired by the time Dan gets home.

using up the left overs

Had a productive morning. I have been making a patchwork blanket for the garden (wont get chance to use it at the rate grrr rain!) so I have been left with lots of bits of fabrics. I decided that since the lavender is flowering I would make new scent pouches for all the drawers. I went with the pyramid design.
Also had a collection of blackened bananas in the kitchen so me and William have made tea bread. It's just baking now so I'm looking forward to enjoying a slice soon. x

Jam

Went to the allotment this afternoon. It was absolutely covered in bind weed and in need of a good water. We must try and find more time to get down there but there always seems to be other things going on. In spite of the state of it we managed to dig up a couple of kilos of potatoes, pick a few handfuls of french beans, pick one courgette and best of all pick a couple of kilos of plums! So back in the warm kitchen the plums are rapidly humming with wasps and set to rot by tomorrow, so I've just finished turning them into jam. Not my best I must admit. The new induction hob doesn't like my preserving pan so I had to use my cast iron casserole dish and the sugar caught and burnt. :( Still not completely inedible, quiet like toffee apples. I'll make some jam pot covers tomorrow ....

Back to craft

Just returned from the family holiday and after doing the mountain of washing. William and I felt in need of cake. I wanted to do double chocolate cake with chocolate icing but no icing in the cupboard. So we went with decorated cakes instead. I'm never quite sure on green icing but William loves it!
